Chef Zero Yu has recently joined the culinary team at Hong Kong’s most popular al fresco dining attraction, Top Deck at the Jumbo, bringing a fresh and exciting à la carte menu to the diners.

Executive Chef Yu has been part of the Cafe Deco Group family since 2008. ‘I love to keep everything simple while bringing out the best flavor of the ingredients.’ Says Chef Yu, who will be incorporating the slow-cooking method, Sous-vide, to the new à la carte menu at Top Deck. This French cooking technique involves cooking food in vacuum-sealed plastic pouches, submerged in a water bath held at a precisely controlled temperature. This method allows the food to stay juicy, retain its nutrients and flavor as well as be perfectly cooked throughout. The food will be more flavorful than if it were cooked or roasted in an oven or pan.
